Ingredients
- 3/4 cup fresh pineapple juice
- 1/2 cup pure coconut water
- 1/2 teaspoon pure ginger juice
- 1 teaspoon runny honey (optional)
- 1 lime
Instructions
- Extract 3/4 cup of fresh pineapple juice using a juice extractor, or alternatively, pulse peeled and cored pineapple cubes in a food processor, then spin the puree in a double-cheesecloth lined salad spinner and strain if needed.
- Peel a piece of fresh ginger, grate it using a microplane grater, and press the grated ginger through a strainer to collect 1/2 teaspoon of ginger juice, or use a juicer.
- In a cocktail shaker or a mason jar filled with ice, combine the fresh pineapple juice, coconut water, and ginger juice.
- Taste the mixture, and if additional sweetness is desired, add up to 1 teaspoon of runny honey and mix well, adjusting according to the sweetness of the pineapple.
- Fill small, chilled glasses with lots of ice cubes and add razor-thin slices of lime to the glasses.
- Pour the pineapple coconut water mixture into the prepared glasses and finish with an extra squeeze of lime, if desired.
