Recipe

Ingredients

  • 3/4 cup fresh pineapple juice
  • 1/2 cup pure coconut water
  • 1/2 teaspoon pure ginger juice
  • 1 teaspoon runny honey (optional)
  • 1 lime
Ingredients

Instructions

  1. Extract 3/4 cup of fresh pineapple juice using a juice extractor, or alternatively, pulse peeled and cored pineapple cubes in a food processor, then spin the puree in a double-cheesecloth lined salad spinner and strain if needed.
  2. Peel a piece of fresh ginger, grate it using a microplane grater, and press the grated ginger through a strainer to collect 1/2 teaspoon of ginger juice, or use a juicer.
  3. In a cocktail shaker or a mason jar filled with ice, combine the fresh pineapple juice, coconut water, and ginger juice.
  4. Taste the mixture, and if additional sweetness is desired, add up to 1 teaspoon of runny honey and mix well, adjusting according to the sweetness of the pineapple.
  5. Fill small, chilled glasses with lots of ice cubes and add razor-thin slices of lime to the glasses.
  6. Pour the pineapple coconut water mixture into the prepared glasses and finish with an extra squeeze of lime, if desired.
  7. Enjoy your refreshing Pineapple Coconut Water!
